Just made this but used less salt and used a whole red onion wedged and roasted together added 1 TBSP pure maple syrup and put under broiler for last 2 minutes. family loved it!!!

i can't believe how many good reviews this got. it was way to salty and i only used 1.5 teaspoons, it was also to much oil, and pepper when i make this again I'm going to cut everything in half. and my squash was over 3 pounds.

I absolutely love this simple dish. Roasting vegetables with salt, pepper and olive oil is my favorite way to each veggies.

Awesome, just made this with Melissa's shrimp with cilantro pesto and this was the star of the show! I saw Ina on another episode finish this from the oven with a drizzle of "good" maple syrup so that is what I did and WOW. Delictable!!

If I had known how delicious it is to drizzle some olive oil onto butternut squash and roast it with salt & pepper, I would have done it years ago. My husband and I are 4o something and shocked that we just found a food so simple and delicious.

This was simple and delicious. My husband who isn't a huge squash fan ate it up! I did cook it a few minuets longer to get some pieces crispy and that made a difference. You really need to try this one.

Simple and easy. A little too much pepper for my taste so I will lessen it next time. I also added a tiny bit of brown sugar after cooking to give it a bit of sweetness so my kids would eat it.
