Cooking squash has never been so easy or tasty. I made 2 squash and had some leftover and added it cold to my salad the next day and now I sometimes cook the squash just for my salads.

The squash tasted fantastic! Originally, when it was first out of the oven, it was a bit too salty. So i ended up sprinkling just a tad bit of brown sugar over them, while still warm, and it made them more full and balanced and savory. Great tasting! I will use less salt next time though and the brown sugar might not be needed after all. Ill make this again and again. (ps. show said to heat oven to 425, and recipe says 400. I did as the show said 425 for 30 min, and it turned out great.

Barefoot Contessa, you are the QUEEN! The Butter nut squash was absolutely delicious! It's amazing how far a little salt and pepper will take you!

Ina presented this recipe with a slight twist during a Thanksgiving show- she added maple syrup after removing from the oven. I tried this recipe as a "new" vegetable for our Thanksgiving dinner, adding the maple syrup as she did in the show. It is definately a keeper- everyone had great comments. I tried it again for dinner tonight, just to see if it was a "fluke". We all love vegetables but get tired of the same ole ones. I will keep this in the vegetable rotation- it is so easy to prepare and so tasty. If you don't know if you like butternut squash, try this recipe first! You'll love it.

We used to use frozen squash. However this year for Thanksgiving I wanted to try something new and this was incredibly tasty! Everyone wanted it added to the our traditional holiday menu. Made it again with Christmas dinner for family and company and again was a big hit. You can definitely make this the day before and reheat. Thank you, Ina!
