I don't like butternut squash but when I had this salad at my sister's house, I found this salad to be absolutely wonderful!!! I now know there is a way to fix butternut squash where it actually tastes great!

First time I made this, I didn't think it would be enough to eat, so I added some sliced steak to it to make it a meal. My husband loved it -- I loved it! Now, who needs the steak? It is fantastic. Would love to find a way to do the butternut squash on the grill -- it would be a great summer recipe without heating up the house!

    Thanks, Ina!

This dish was awesome! I used pecans rather than walnuts but otherwise followed the recipe. We loved it. Served with roasted pork tenderloin, but we both found the salad hearty enough to be a main dish. Will be on my thanksgiving table for sure! Beautiful, tasty and healthy!

Never tried roasted butternut squash before but I sure am glad I did! My husband and I just love this. He asks me for it all the time and that is very good seeing as how he is such a picky eater. The squash has a wonderful caramel taste from roasting and the cranberries give it a great tart & sweet flavor.

I didn't have any apple cider on hand, so instead I sauteed the shallots in a pan with a little olive oil and then added some orange juice and the apple cider vinegar...reduced it a little and then mixed it in a bowl with the other dressing ingredients. Also, I just used mixed greens instead of arugula and almonds instead of walnuts because that's what I had in the fridge.

omfg! i thought her cape cod chopped salad was good. this tops everything! the dressing has an incredible depth to it. i made a couple of substitutes according to what i had on hand. i used toasted pecans instead of walnuts and sweet potatoes instead of butternut squash. i will definately be making this for friends !!!

You cannot go wrong with this salad! The flavors are amazing and other than taking a little time to prepare the butternut squash, the preparation is easy. Definitely worthy for company! Have made it several times as a side salad but tonight am adding grilled chicken to it - yum!

I am a huge Ina fan and have found her recipes to always be outstanding. This salad is one of the best of the best. I have made this salad numerous times and it is always a hit. I offer it at my coffee shoppe and people rave about it. The dressing itself is amazing and I have used different greens all with success. Dried cherries are great in this and I usually top it with goat cheese croutons that have been lightly pan seared. Don't be afraid of this combination, this is a great salad. Thank you Ina!
