    I made this for dinner tonight and absolutely loved it! I used half arugula and half baby spinach but otherwise followed the recipe exactly. Next time I'll probably skip the parmesan though as I thought it overwhelmed the butternut a little too much - it was good but this salad would be great without it (and I love parmigiano reggiano!, or maybe with just a few huge shavings on top... Very fall-ish and I couldn't stop snacking on the roasted pieces of butternut!

    I switched butternet squash for yams and omitted apple cider and switched out apple cider vinegar for balamic vinegar....wow...it was the best!!!!!!!!!!

    I've since made this dish many times.....I love it....thanks for the inspiration!

    This was a beautiful presentation and perfect for fall. I made it for two, so reduced the amount of dressing, used just a sprinkling of Parmesaon on each salad and used a small butternut squash. Wow! My husband loved it!

    Wow! Just made this recipe. Did not have any cranberries but substituted dried cherries. Also did not have any applie cider so used checken stock as suggested by someone. Willl get applie cider and cranberries for the next go around. This is a definite keeper. Thanks Ina once again.

    I made the viaigrette only and served it over some thin pan-roasted pork chops and it was excellent. I also roasted some butternut squash as a side dish and it all went together so well. I will definitely make the salad and will use the vinaigrette over and over! Another A+ for Ina!! Kathye

    I made this with honey glazed salmon and they where such a great compliment together. Even my picky husband loved it and finished it before the salmon, and that NEVER happens : Thank you Ina ♥

    Thank you Ina.....this is one of the best salads I've made and I make it a point to make it for guests. Had some friends over for roast pork dinner and made this butternut squash salad. My guests cud not believe how "great" it was and also easy to make. I followed the recipe precisely with the exception of using 5 oz arugula and 1/3C olive oil and less parmesan cheese. One of my guest had 3 servings of this and I was beginning to wonder if he wud have room for the pork roast, potatoes, sauerkraut and green beans...not to mention the dessert which consisted of Ina's "roasted berries" which I served over ice cream.
    This will be great to go with Thanksgiving dinner.

    I just made this salad, and it was SO good! The only think I changed was I used pecans instead of walnuts, and spinach instead of arugula, because that's just my personal taste.

    As my husband and I were eating it, my husband kept saying, "Mmmmm....MMMMmmmmm!" Which means he really liked it. My 21 month old daughter loved the squash, too.

    As always, Ina didn't let me down. I'll definitely be making this one again very soon.
