    This salad was gorgeous with the butternut squash and absolutely delicious. The squash, toasted walnuts and cranberries were just heavenly. I will definitely serve this to dazzle my friends.

    I am so happy to have another recipe for butternuts besides soup and as a roasted veg. I used goat cheese instead of parm and I thought the way it melted under the warm vinagrette was fabulous. Can Ina do no wrong?

    I made this for an anniversary lunch with my husband and we both thought it was wonderful. I'm a diabetic and I made some slight changes to reduce the carbs since the original recipe was too high in carbs to fit my dietary restrictions. First, I reduced the maple syrup in the squash coating to 1/2 TB. The cooked squash was sweet enough and the reduction wasn't missed. Second, instead of using apple cider or juice, I used chicken broth and, again, the vinaigrette had plenty of flavor. If you want more sweetness, just add a packet of Splenda to the broth mixture after it has reduced. Believe me, even with these reduced carb changes, this salad was fabulous and I don't feel the flavor was compromised at all.

    Ina has done it again: Class meets casual meets great taste!!! I can't stop making this terrific salad. It is equally good with baby arugula and baby spinach. If you're a die-hard arugula fan like me, you?re in for a very special treat - the balance of sweet and savory with the peppery arugula, and contrast of textures is truly magic. Merci, Ina.

    I really like arugula so any time there is a recipe with it, well lets say you have my attention. Almost every thing Ina makes I really like, so I had to try this.

    I had never used butternut squash in anything in my 62 years, what a waste of decades in which I could have enjoyed this veggie. When she used it in this recipe I was truly trusting her. I was NOT disappointed. This is soooooooooo good, oh my gosh!!
    I made it again for Mothers Day this past weekend. I served it with Ina's Mac and Cheese dish with the two types of mushrooms. Don't know why it is called Mac and Cheese, the name makes you think of something you would serve to children. Any way, It was a hit! Two very good recipes. I was so full at the end of dinner but couldn't stop myself from nibbling on what was left in the salad bowl.

    Try it you will like it! PROMISE!

    I don't know about every one else but I want to get on Ina's friend list. Can you all believe how she cooks and gives so much to her friends? Ina you have inspired me to do the same for the friends in my life. God Bless YOU! Your the Bomb!

    My husband said he's never had butternut squash taste so good! We both absolutely LOVED this salad and I'll make it again and again. And since I have plenty of dressing left over, I can use it on other salads... quite tasy!

    What a keeper! Quick, simple and very tasty. I was planning on cooking Sole Menieure anyway when I saw Ina prepare the salad as a side. It did pair well with the fish.

    On another note, I am getting very frustrated with the poor service on the FoodNetwork's "new" website. I grow older each time I try to find things while using it! Also, there is some bug in the "save to your receipe box" - I cannot use it as it is appearing on the screen but no way can I scroll through my folders to put a recipe in? Get with it FoodNetwork - your website needs help.
