This salad is exceptional! It tastes like you have gotten take out at a five star restaurant. I made it exactly as the recipe states and it was just delicious! My kids even ate this and they are 5 and 7. I will try the spinach next time and maybe even through in some pieces of roasted chicken to make it more like an entire meal. This recipe is a keeper! Thanks Ina! You are the best!

This salad is fantastic. I did not have cider vinegar on hand so I just used regular white vinegar. This salad is one that I will make over and over again.

Wow! This salad was delicious...absolutely delicious! The dressing was a cinch to make, and took no time at all. I didn't want to spend a fortune on "real" maple syrup, so I just used what I had, and it turned out fine. I think this salad would be great without any syrup. I also did not have parm, so I used blue cheese crumbles, and pecans instead of walnuts (personal preference. Even my husband, who is not a salad guy gobbled it up and was disappointed there weren't seconds! This is a very versatile salad. Hearty enough to eat with a piece of toasted bread for a light dinner....or served as a side dish. Thanks Ina...another keeper from you!

This is the most wonderful salad. We served this for a dinner of 4 people as a side dish. Not one speck remained!
The butternut squash had a slight sweetness and the shallots in the dressing added a lovely texture and aroma. I let the cranberries stay in the oven for a little longer then the 5 minutes, that worked well too.
This will definitely be a staple in our future dinner menus! Possibly even at the Holidays!
    Thanks INA!

This was such a delicious salad. I had my doubts about a warm salad, but the butternut squash was so sweet and the warmth of the dressing made this a comfort food. It was very easy and just wonderful.
    Thanks Ina, another winner!

I saw Ina make this one on her program and had to make it. It was as easy to make and the flavors were wonderful! My family loved it, even the fussy ones! It will go in my favorites recipe file to make over again! Thanks Ina, I cant wait to see what other recipes I can try on my family!

I saw Ida make this recipe and my office was having an upcoming salad and dip luncheon. This looked so easy to make and the combination of the ingredients looked delicious. I usually bring items I have made and tasted, but this would be a 1st, bringing something that I had not prepared and tasted. The dish received many, many compliments and others wanted the recipe. I made a substitution, I used spinach instead of arugula. It turned out great. The contrasting colors of the green spinach and the butternut squash made a great presentation.

    Thanks Ida!

Just delicious - and hearty. First, let me say I hate it when someone gives a recipe a bad review and then explains how they substituted a bunch of ingredients. In this case I love arugula more than anything, but had a bunch of spinach I needed to use, so I substituted spinach for the arugula. It was absolutely fantastic - so do not hesitate to make it with spinach. Next time I will use arugula, and I look forward to it, but spinach is fantastic in this recipe also. Everything is really nice - the flavors, the textures, and it is so pretty. Just an all around wonderful dish/salad. With a nice hunk of bread, you really could make a meal out of this.
I agree with what others said - it takes much longer than stated to reduce the liquid, so plan for that - and do take the time to do it.
    Yum city!!

My husband and I loved loved loved this salad. The dressing took longer to boil down to 1/4 cup than it said it would I just turned the heat up to get it down. The squash was so good and the toasted walnuts, cranberries and all the flavors were perfect together. I put more dressing on than I should have, next time I'll drizzle it on per serving instead of the whole bowl.
