If i could throw out the squash it would be a good salad. In my opinion butternut squash doesnt' taste good in this combination.

I LOVED this salad. I made it a couple weeks ago for a lunch with friends and we were all scraping the bowl for the last bits and pieces at the bottom. Made just a couple adjustments: used candied walnuts instead of plain, added a little bit of red wine vinegar to the vinaigrette (I like it a little tangier, and I throw in a big handful of pomegranate seeds. Big hit! Making it again this weekend!

Love this salad, particularly served with a delicious butternut squash soup. A LOVELY ladies lunch or light dinner. Looks gorgeous and super easy to make. Flavors are fall-like and warm, with a wonderful sweetness from the syrup. (I've been known to sub with regular pancake syrup in a pinch and still very good. Thanks Ina

This recipe was a huge disappointment. The squash was OK on its own but the combination of salad greens, sweet hot dressing and cooked squash was pretty bad. Usually, you can count on Ina to put together a good recipe. This one is just off.

I tried this recipe for dinner tonight and it was okay, nothing special really. The star of the dish was definitely the butternut squash. I did not care for the dressing too much because it was quite oily even though I only used 1/4 c of olive oil. Next time i think i will rather choose a balsamic vinagrette instead. But this is a very healthy salad with the squash & the veggies and the tomatoes that i added.

Wow! What a salad! My husband and I nearly licked the salad bowl after we polished the entire salad off last night! I did not use all the dressing in one night. It would probably be enough for 3 times the amount of salad. Just have the salad three nights in a row like we will! This would be lovely for Thanksgiving with all the Fall flavors.

LOVED this recipe! You can prepare it without the arugula & just follow the recipe for the squash. I added walnuts to the squash & cranberries...it was DELICIOUS! Not sure why someone said this recipe was bland???

I usually LOVE Ina's recipes, not so with this one. I found it labor intensive for a pretty bland salad. I didn't care for the dressing either. Wont be making this again.

I wish I had read the comments before making it. I agree that the oil and salt are too much and overpower the fresh ingredients. I love this take on butternut squash but next time I make it I will cut the oil and salt in half.
