    Wonderful creamy soup. I used cumin instead of curry powder (a personal preference and split the squash then scooped it out. I also roasted the squash longer than the onions and apples. All good hints I learned from others.

    Absolutely delicious! Changes I made: Used only one onion and one apple. Used 1/2 tsp. cumin when I roasted the veggies. Pureed veggies in a blender with vegetable stock until I got the desired consistency. Added a little cayenne at the end. Even better the next day.

    This recipe is deadly. I used garam masala, and added a pinch of nutmeg and cinnamon. so good.

    This is a sensational soup!! I had thought 1/2 tsp curry powder would be too little. Not so! Used medium onions, supposedly yellow, but actually sweet; they caramelized nicely. I also used only 1/2 tsp salt (total for dietary reasons. Also used only about 1/2 tsp pepper. Leftovers eaten the next day were just as yummy, maybe even better. A definite keeper recipe.

    Amazing!! Of course I needed to eat some of the yummy roasted veggies right out of the oven, then again right after I pureed them... so the fact that it didn't yield as much actual soup as others is my fault, not Ina's. I took the advice of others and cut onions/apples larger than the squash and it roasted perfectly - no burning whatsoever. I used sweet onions and didn't find it overpowering as written in the recipe. Would make again and not change a thing! YUM!

    Delicious!! I made this soup and accidentally forgot one of the McIntosh apples and added a little shredded parmesan and even my toughest critics loved it! I also baked the butternut squash in the oven instead of cutting up the pieces... I think I will try that next time. Try a little bit of sun dried tomatoes (julienne cut as a condiment-- it was fantastic!!

    I loved this soup, it was so healthy tasting. I did not do the condiments but added a lot of fresh pepper on top.
