Loved this! It's easy - especially if you buy a squash already cut and ready to roast - and full of flavor. I will most definitely add this to my soup rotation.

Easy and Delicious! This recipe was great. The soup turned out to be very tasty. Although i have one suggestion to cut short the preparation time. I would just cut the squash into 2 halves, bake it and then scoop it out. This is way easire and less time consuming.

This hit the spot after our huge snowfall. I had some carrots, baby red potatoes and leeks in my fridge that i wanted to get rid of, so i added them to the soup, which was yummy and made it a little thicker.

Deeeelicious! The combinationof the squash, onions and apples were devine. I even snuck a couple of bites of it before i pureed it. I didn't top with any thing else except a hint of cream and olive oil swirled together. Will use this again.

A friend made this soup for our book club meeting and everyone raved!! One of the best butternut squash soups I have ever tasted. Can't wait to make it myself

Not a fan. Sorry. Maybe just not into the curry aspect. My husband took a bite and wouldn't eat the rest, and he will usually eat anything.

I feel like it was missing something, but can't quite put my finger on it. But it was still very yummy. It was a perfect recipe to use up my leftover butternut after making risotto.
