    Watched Ina make this today on TV and couldn't resist trying it. It was incredibly easy and the flavor was wonderful. My husband raved. Next time I think I'll add a few cloves of garlic to the roasting vegetables, but there's nothing else I would add. It was terrific!

    Got my Food Network Magazine and saw the Ina Garten feature and then watched Ina make this today on her show. I couldn't resist making this. This soup couldn't have been easier! And it had a fantastic taste! The apple and onion added complexity to the flavor, and the curry powder and condiments took this soup to another level. I will make this again and again, for sure!

    Soup sounds great! -- wanted to add a tip I learned this fall when I was making something similar. I'm sure some of you are aware of this, but I wasn't!

    After cleaning and dicing my squash, I noticed that my hands were bright orange -- figured I should rinse them, but realized while doing so that they not only appeared stained, but the skin was kind of shriveled (picture what it looks like if you get Elmer's Glue on your hands and let it dry -- couldn't get them clean! Turns out some people are prone to butternut contact dermatitis (also happens to some people with Acorn squash. No biggie, as it pretty much went away for me after a few hours -- but to avoid you may want to slip on a pair of disposable latex or rubber gloves while you're prepping your squash.
