Fantastic soup for the squash hater! It's very easy and the kids loved it! I have made it three times in a two week period. I didn't make any of the condiments; instead, I just served it with some rustic bread. I cannot wait to make it again.

Wow! This'll make your head spin. This is so easy, yet tastes like a 5 star restaurant. It's so hearty...even my wife, who is not a soup person, keeps asking me to make this.

The first time my friend made this & brought me some left overs, I had to have more!! My six and nine year old boys loved it as well. Because it is pureed, they ate vegetables that they would have never eaten before. Every time I make this for someone else, they beg me for the recipe. I just sent out another link today. Best of all it's easy, comforting, and packed with nutrients!!

What a great recipe - and easy too! Even the children liked it. I did use a pinch less curry though because I wasn't sure how the family would like it. I highly recommend.

Good soup. Easy to make. I used a really good curry, so that helped. I agree with shellygloo---condiments didn't add much, though having the extra toasted coconut around was yummy.
I made the mistake of roasted the apples with the squash. My apples (the first batch that burned turned into mush. My son (somewhat picky 9 year old loved it, so that's another bonus.

I found this soup relatively unsatisfying and lacking flavor. Perhaps I needed to add more curry, though I used the 1/2 teaspoon plus a pinch. I never go through the trouble of trying to cube and peel a butternut squash--too hard and not necessary in my book. I take a whole squash and puncture it so it doesn't explode, and set in the oven on 350 until it's the desired softness. Then it is so easy to scoop the squash out. This doesn't caramelize the squash, but the apples and onions were caramelized. I didn't like the addition of the condiments except the scallions--they just didn't seem to do anything for the soup. It is a super healthy recipe tho, and very easy.

I liked this recipe---after I tweaked it a bit. I didn't have the apples, so I used carrots (like someone else suggested. And then instead of curry--because I am not a big fan--I used some garam masala. Wow! It came out great! Certainly, it is such a simple recipe to make or to tweak, I would reccommend it to anyone.
