    I liked this recipe---after I tweaked it a bit. I didn't have the apples, so I used carrots (like someone else suggested. And then instead of curry--because I am not a big fan--I used some garam masala. Wow! It came out great! Certainly, it is such a simple recipe to make or to tweak, I would reccommend it to anyone.

    I loved the soup - used two Gala apples instead of McIntosh (I didn't have any and added two stalks of celery into the mix. I used 3 c. stock and 1 c. milk to liquify. The texture was still reminiscent of the foods I prepare for my seven month old. I added four cloves of roasted garlic and cayenne pepper to finish it off. I didn't use any condiments except a dollop of sour cream. It was delicious though. Sweet, yet savory. Beautiful soup for the fall and winter months. Thanks Ina!

    Very good. I don't like curry so I used cinnamon and nutmeg. I loved the taste of the roasted veggies! My first butternut soup!

    De-light-ful! Silky & cozy without any heavy cream. I will create this again to eat around the fireplace as the tempature starts to cool off! In addition, we sauteed 2 celery stalks & 3 cloves of garlic in a little evoo. Toss it all in w the roasted fruit & veggies & grate fresh nutmeg & cinnamon. Add cayenne for desired heat. The suggested garnish of toasted cashews, coconut, gr onions & banana altogether were a smash! Luved it!

    I thought the soup tasted wonderful! I used pheasant stock and used cool curry (watkins. Using cool curry gave the soup a lite curry taste.

    An excellent recipe and one that won me over as a fan of butternut squash. The soup is awesome on its own - the condiments take it to the next level. Will definitely make this again, a big crowd pleaser

    This is the first time I have written a review but felt this receipe was well worth wrinting a review. My family thought this was wonderful. We don't like curry so instead I grated nutmeg in it. I will make this again in a few days and make at least a double batch so I can have leftovers.

    First time cooking with curry. Great simple recipe. The soup was very flavorful and I will be making this again. Didn't use the condiments part, instead used some sour cream. YUMMY!!!

    Very warm and tasty. It's a rainy fall day and all I could think about was having some good soup. I saw someone make butternut squash soup and remembered I have this recipe.This came out better than I thought it was and I think I have tasted so much I am full.This is a keeper for the cold months.
