I saw this on the show today and tried it tonight!! AWESOME!!!! Was so surprised at the taste of the apple and veggie's!!! Will certainly be one of MY regular dishes!!!! I used the food processor to blend mine. Worked PERFECT!

I loved roasting the squash w/ apples & onions. Curry added a nice flavor as well. I added shredded zucchini and yellow squash 10 minutes before serving - it added excellent texture. Yummy recipe!

Healthy, and awesome! I also used an immersion blender. Would not change a thing. For a condiment I used low fat sour cream.

I tried this soup last night. I didn't have onions, so I substituted shallots instead. It turned out great! (I also used an immersion blender I loved the fact that it had a creamy texture without having to use cream! It tasted wonderful without the condiments, but for fun, I went ahead and tried it with the condiments. I thought it gave the soup a very unique twist. My husband really enjoyed it too--both with and without the condiments--. This recipe is definitely one we will use often. Thanks Ina!

I love butternut squash, so I have quite a collection of butternut squash soup recipes in my collection. This is my new favorite. Roasting the squash, apples and onions gives it a great depth of flavor. I put the roasted fruit and vegetables into a pot along with the stock and pureed it with an immersion blender to save washing another appliance. I increased the stock a bit and served it with all of the condiments. It was beautiful to look at and absolutely delicious. Thank you, Ina, for another great recipe!

This was good, easy, quick, and different than most soups people are used to. I gave it 4 stars, since I didn't use the curry condiments - don't like curry - and just wanted a nice butternut squash soup without all the pomp and circumstance. It was tasty. I did half a recipe, used a Bosc pear instead of a Mac apple, and a pinch of ginger for the curry I deleted. The veggies roasted beautifully in the "Ina roasted in the oven method". I used an immersion blender instead of the processor.........less clean up, and I also added a more broth........don't like it so thick. I can see where some people wouldn't like this........it's for a more sophisticated pallat and not for those who wouldn't like a sweet soup. My husband is a meat and potatoes type guy.........not sure he'll be eating this tonight........oh well, more for me ;

I have never liked pureed soups before. But this one is a keeper. The apples gave it just the right amount of sweetness. I like curry. So maybe next time I might double the amount.

I saw Ina make this recipe this morning and had to try it. It was ridiculously easy and the BEST butternut squash soup I've ever made or tried - and I've tried a bunch. I loved the condiments too - great touch and who knew that banana would be good as a garnish on this soup! YUMMY!!! Thanks, Ina!

Not a fan of curry, so omitted that but used greek yogurt as a condiment. Yummy!
