I made this for our superbowl party after seeing it on TV. It was sooo delicious! I loved how unique this dip is and the easiness of preparing it. I found Tahini at Whole Foods Market. I made it a day in advance and it was still great. I highly recommend this recipe.

I'm not sure what I did wrong but I ended up ruining two roasting pans and the dip.

It seemed like there was some combination of my oven being too hot (never happened before and there not being enough olive oil to keep it from burning.
I even turned the oven down partway through in hopes of not burning it!

I don't think I'll make this one again.

This is so simple to make...and it looks beautiful and is so tasty! I didn't use the tahini and just added a dash of hot sauce when I processed it rather that using cayanne pepper. This is great as a sandwich spread, served cold on toasted wheat bread. Really....about 30 minutes is enough time to roast the veggies. Enjoy!!!!

Love this recipe Ina! I make my own variations depending on what I have on hand, and it's always delicious! Sometimes I add chickpeas to make it more hummus-y, and today I made it with cannelloni beans and extra lemon. I love eggplant and baba ghanoush - this one is a keeper!

I was a little skeptical, but you SERIOUSLY have to try this recipe. It is amazing just with bread, and if you don't have tahini just add an extra tablespoon of lemon juice. The headmaster of my school and his wife loved it as well and they don't even like eggplant. TRY IT!!!!

This is an AWESOME recipe. I took it over to a friends house for a party and it was a huge hit. I followed the recipe exactly with one exception - I also added a roasted yellow bell pepper that I had in the fridge. I served with rice crackers - absolutely amazing. I served this warm - bet it would be great with some crumbled feta on top.

It was so easy to make. Just chop everything up, toss and bake/roast, then blend/process and enjoy! I didn't have tahini paste (plus I read it's not that good for you, fattening?, but since it's made of sesame, i drizzled some sesame oil instead (about 1/4 teaspoon. Fragrant, healthy and delicious! Keeps real well, just reheat for 30-45 seconds and enjoy!
