    This recipe looks absolutely amazing. I need to know can this be made the night before or several hours before a party? I would appreciate some help; I'm a beginner.

    I just made this and I loved it. It was a little spicy but I think thats because I only used one eggplant since thats all I had on hand. If you like eggplant you'll love this dip.

    A friend served this last night and it was the hit of the party! There were fabulous $14 a pound cheeses and instead everyone was battling over the low calorie, absolutely yummy Roasted Eggplant dip. We all decided if we gobbled it all up we would have our five servings of vegetables for the day!

    I watched this spread being made on the Barefoot Contessa and it looked great. It was easy to make and sensational once I tried it. I took it to a party and everyone loved it! Hats off to Ina Garten

    You can find Tahini at mediterranean stores or most grocery stores...think I found mine at Wild Oats or Trader Joes. Ina used the same brand I have Krinos...you also need this for hummus.
    Just bne sure to stir it well before using as it separates the same way natural peanut butter does.

    This was one of the most-enjoyed dips I served last night. I had really great crackers, oved-baked pita triangles and hot whole-wheat baguette. People just kept on returning to the bowl and passing it around. I've made this 3 times before, but never for a party. It was a great success.
