    This was one of the most-enjoyed dips I served last night. I had really great crackers, oved-baked pita triangles and hot whole-wheat baguette. People just kept on returning to the bowl and passing it around. I've made this 3 times before, but never for a party. It was a great success.

    This is a great dip. Everyone loves it. I blend mine until fine and Wheat Thins seem to go better than the Pita Chips. A friend used it as a sandwich spread. Very easy.

    I have been trying to recreat my great-grandmother's eggplant caviar/melitzanosalata for several years -- this is the first recipe that even comes close (I was missing the tahini. Delicious. Thank you!!!

    Had an impromptu dinner for relatives and needed a quick and easy started, so served this as the front end of a meal that also included Ina's roasted shrimp and orzo salad. This is such an easy recipe that even the most beginning cooks can make it and trust it will come out well. The flavors are good; although I made the "executive decision" to lower the 3/4 tsp of cayenne to 1/8 tsp, knowing my audience, and it was a good decision as it still had plenty of "kick". I'd make this again, in particular as part of a mezze platter.

    This dip is an extremely yummy appetizer that I will definitely make again. It yields plenty of dip from the recipe to leave you with more to munch on later. The veggies and garlic are so yummy and filling, you should be careful to not spoil your meal...believe me, you'll want to!! I added one more clove of garlic straight into the food processor with the roasted veggies and I loved the final result. Make this!! It's GOOD!

    I think this is delicious! I added a little red pepper flakes for a kick.
