    This was mouth-watering! I substituted low-fat feta for the blue cheese, Merlot for the port, chopped walnuts for the walnut-halves. I forgot to peel the pears but that didn't matter. She doesn't mention covering them with tin foil to cook, so I did not, as I no longer use tin foil anyway. I added a little extra of the feta, and the cranberries. Next time I'm going to make a deeper well other than a melon baller---the wells are way too small. All in all---an excellent tasting dish! I LOVE it!

    Made this the other nite with a port that wasn't even that great and the results were fantastic. I'm considering serving this for Easter and perhaps Christmas.
    It's really very easy to do and I also just had 1/2 a leftover portion for breakfast!

    Yes, A little Three Olives Choclate Vodka instead of Port, and some melted semi-sweet chocolate chips in with the apple cider and I was drinking the pan drippings! I love this combination any which way. THANK YOU Contessa!!! What a creative idea! Way to Go! So many ways to do this one. I

    This is such an elegant and delicious recipe but totally easy to prepare. I served it for dinner and had leftovers to take for lunch the next day. I served three of my co-workers and they all loved it! You know it?s good when everyone asks for the recipe.

    Perfection! I am allergic to walnuts and just substituted toasted pecans. It is nutritious, beautiful to look at, and the textures surprise and delight. Bravo!

    I made this recipe last night on the fly... I had the arugula, pears, cranberries and walnuts on hand, but I substituted gorgonzola crumbles for the stilton, since I wouldn't normally use stilton for anything else. The crumbles were easy to work with, and the flavors were great together. I didn't have any apple cider, so I used about 3 tablespoons of Strongbow hard cider (ALWAYS in my fridge instead. The taste was still great. I ate this warm for dinner last night and cold for lunch today - both ways were excellent.
