    This sandwich is so good. I used jarred roasted red peppers and it was amazing and so easy. I am not usually a fan of capers but they work in this recipe. I cut the amount of goat cheese since I used the jarred peppers but I made no other changes.

    This is THE most requested sandwich by my family! I tried the recipe for the first time this spring, and we've made it on a monthly basis since then. The only change to the recipe is with the red peppers. Always looking for a short cut in the kitchen, I purchase a jar of roasted red peppers instead of doing them myself. Easy to put together....and when plated, you'd think you were dining at a bistro. The flavor that comes from this sandwich will awaken your taste buds!!

    Have made this for two brunches (along with Ina's White Cannallini Soup...plus took two big sandwiches cut up to a 4th of July Fireworks display...(friend doesn't have a grill - we're in nyc.. Each and every time: A hit. P.S. I never use as much salt as Ina says...because...I'm afraid of over-salting. I let my guests salt to their tastes. This one - with capers - definitely doesn't require much added salt...and I didn't exactly see people getting out a salt shaker to spice it up. Fabuloso...just as it is. Again - thanks, Ina. Quick, easy...and ... gourmet.

    I just made this recipe for the second time tonight. I use jarred peppers as well but marinate it the same way that the recipe calls for. Both times that I have fixed this we have used some pesto and prosciutto as well. It just gives it a little additional flavor.

    Tried it on Ciabatta rolls first.....a little dry. Tried it again by brushing whole grain bread with olive oil and assembling sandwich as recipe stated except added leftover sliced roasted chicken and grilled the sandwich. Family loved it!

    This was so good! I used marinated red peppers from a jar which made this quick , easy and great. I had extra of all the ingredients so I had another for lunch the next day but added some sliced turkey. Another winner!

    I just made this today- (starting last night by roasting and marinating the peppers

    It was wonderful! My friends both really liked it.

    I made it by using an 11 ounce log of goat cheese- and then added some basil pesto and fresh chopped italian parsley and tarragon to it since I had them on had.

    I put the goat cheese on the bottom layer of Ciabatta a little thick- then drizzled the juice form the red pepper marinade on the top layer and then added another layer thinner layer of goat cheese to that. I still had a small tub of goat cheese leftover.

    I used a lot of fresh basil- about two layers- one on top of the goat cheese on the bottom- and another on top of the roasted peppers. My purple onions were surprisingly strong instead of sweet- so I used them pretty sparingly.

    Used this recipe as inspiration for a similar dish. I had no bread and my daughter was sleeping so I couldn't run to the market.....

    Pasta salad!

    I added some grilled/peeled tomatoes, ginger and grape seed oil instead of O.O.

    My husband thought it was divine and asked to have the leftovers for lunch the next day. Highly recommended.
