SO DELICIOUS!! And so easy! I didn't have a food mill to use but it didn't matter--I love this soup b/c I don't like creamy soups. This was so fantastic, I will be making it again and again and again

I have made this soup many times. It's my favorite soup to make for company. It always gets rave reviews. I made it yesterday for a friend who is recuperating from surgery. She called me very soon after I brought it to her. She said "You made one killer soup". I credited Ina with the recipe.
I purchased a food mill so that I could make this soup. My husband and I love it. It's great anytime but especially during a snowstorm.

This was great! I wish that I would have read the recipe more carefully before I was in the middle of making it....I freaked out a little that I did not have a food mill. I had recently ordered an immersion blender for another recipe, so I used that for a few seconds instead. It did a nice job blending everything together. I added a tiny pinch of brown sugar to my bowl because I thought it was a little too tomato-y for my taste but my husband and daughter liked it as is. (Maybe by using the food mill you get rid of the skins and this is not an issue? I was a bit shy on the 4c. basil leaves.
We enjoyed the leftovers and I froze a bit as well.
Certainly will make again!

Try adding a little cream chesee before serving,it adds a wonderfol creaminess

Wow! I watched your show yesterday and you made this soup! Its absolutely fabulous. We just had it for lunch with toast and fat free cottage cheese and dill cucumber. The rich cottage cheese combined with the tangy dill cucumber makes the basil taste explode in your mouth. I halfed the recipe (except the stock and canned tomatoe, using cherry tomatoes instead of plum. Worked beautifully.
