    This soup was easy to make and very tasty. I grated some fresh pareseano/reggiano into it and served it with a nice warm and toasty garlic bread. YUMMY.

    I was really excited to make this soup, it sounded so good. After spending $30 for ingredients (buying 4 cups of fresh basil leaves isn't cheap, I got to work. It took over 2 hours to make this soup from prep, to roasting, to simmering to blending. I don't have a food mill or a hand blender so I transferred it portion by portion to my food processor and needless to say it was quite messy. While it had a good flavor and texture, both my husband and I didn't think there was anything spectacular about it. I'll keep it on hand if I ever decide to grow my own basil.

    This wonderful soup became an instant hit. With the cold winters up here it's nice to have a warm, tasty soup
    to cozy up with. Add rated cheese on top or sour cream. YUM!
