This is so easy to make and tastes just as good as using summer tomatoes. It is exciting to be able to make tomato caprese salad any time of the year and enjoy it. I made it for my husband's birthday last March and he loved it and there were no left overs. I used one package of splenda instead of 2 teaspoons of sugar.

I enjoy watching Ina whenever possible so when I saw her make this recipe I knew I wanted to try it. It is very simple to make and it does turn up the flavor volume on your basic Caprese salad. My boyfriend loves this recipe so it was a huge hit it is very simple but you could certainly entertain with it. Another delicious recipe!!

Not only is this a crowd-pleasing side dish at barbecues, but I've used the roasted tomatoes to make an intense marinara sauce. You can put the tomatoes in a saucepan, pulverize with an immersion blender and thin with red wine (or water. Delicious!!!

INA DOES IT AGAIN ...WITH CLASS AND SIMPLICITY! ROASTING TOMATOES IS THE BEAT WAY TO CONCENTRATE THE FLAVOR (AND USING THEM IN HOMEMADE TOMATO SOUP IS THE BEST. ALSO, SHE ALWAYS USES THE BEST INGREDIENTS...FRESH MOZZARELLA IS A MUST. GOOD OLIVE OIL AND - OF COURSE - FRESH BASIL. THIS DISH EPITOMIZES THE CHEF.. CLASSIC AND THE REAL MCCOY.

This will definitely be a recipe for months when fresh tomatoes are not available. I did omit the sugar as I felt the balsamic gave enough sweetness and put the dish in the oven for a few moments to melt the mozzarella slightly.
