    I tried these first earlier in the year with bland Romas from the grocery, and couldn't believe how tasty they could be. Now that I'm inundated with sweet Romas in my garden I tried them again last night----OMG! WONDERFUL! There
    are some recipes you should reserve for when fresh vegetables are in season, the bonus on this one is it good yearround!

    Wonderful and wonderfully easy. I can my own pasta sauce and I will process my Romas this way before I add the other ingredients. So simple - so good.

    I made this recipe at my sister's house and at first she laughed at them when I pulled them out of the oven. When she tasted them she loved them and wants me to make them again for her.

    After roasing the tomatoes, I let them cool for a bit and put them in a food processor and use it as a pasta sauce. It is absolutely the best pasta sauce I have made in my 40 years of cooking!!

    These are wonderful and are absolutely great just by themselves. However, as the other commenters noted, there are so many different things you could do with these, including a roasted tomato pizza. I'm going to sprinle coursely chopped red onions around the tomatoes before baking next time to have nice carmelized onions along with these beauties! Thanks Ina!

    I made this recipe and layered it with fresh mozzarella, as Ina states in her "Back to Basics" cookbook. Delicious! My sibs devoured it at a family gathering, and my teen son, who is usually not fond of tomatoes, said this recipe is really good.

    I used sliced large tomatoes (beefsteak type rather than Roma (plum tomatoes, as that's what I had on hand. I also added some fresh basil and thyme. The flavor was delicious, but the tomatoes broke down too much and were soggy. I'll be sure to use the plum tomatoes as stated in the recipe next time; maybe they can stand up to the heat better.
