I subbed dry dill in for the fresh (basically turned tablespoons into teaspoons because I didn't have any fresh and they came out deliciously! Will be keeping this one as a quick go-to side dish as 9 times out of 10 I have carrots in the fridge. Thanks Ina!

I have been preparing carrots in a very similar manner for the past 5 years. I use low sodium chicken stock in place of the water and fresh thyme simply because it is more practical to find and my family prefers thyme to dill. My son had a similar reaction as described by some previous reviewers. When I prepared them the first time and he went back for seconds AND thirds, I said "I didn't think you cared so much for carrots" and he responded "you never prepared them this way before!" Go figure...

I made these last night for dinner. My nephew stopped by unexpectedly, so I invited him to stay and eat. When he filled his plate there were just a few carrots. I then remembered he didn't care for carrots. The next thing I knew he was getting seconds and then thirds! The next day my sister called for the recipe. "He's still talking about those carrots," she said. They are delicious, just melt in your mouth and super easy. Ina wins again!!

What a great side dish! Made this for Thanksgiving dinner and it was so simple and delicious. Even those that aren't fans of cooked carrots enjoyed this dish. The addition of the dill makes this dish. Will definitely make this again.

This is a very good and simple carrot side dish. They look pretty when you cut them diagonally. Great with roast chicken and gravy with biscuits and honey!!

So easy and delicious! Great quick side dish/perfect way to use up carrots you have in the fridge. I didn't have fresh dill or parsley so just omitted them. Also, I added a splash of good maple syrup and a sprinkle of garlic salt to the carrots as they reduced. Never have any leftovers when I make these!
