So simple and good. Used local carrots and parsley from CSA and didn't peal the carrots.

My family loves this recipe. It's easy and brings out the sweetness of the carrots. It's on my Thankgiving table every year. :

Excellent. They came out perfectly! I used fresh dill and just love the flavor together.

made this tonight mixed with cauliflower. I used a little chicken stock with the water to add some flavor. Yum! Kids ate it too.

The carrots were excellent. Instead of water I used chicken stock and added garlic powder. I went with the parsley over dill and but some butter in with the boiling session as well!! Yum!!

Delicious! I will make them again! They were the perfect texture-- not mushy or too crunchy! I had to substitute dried dill for fresh, and they were still amazing! Next time I will try the fresh dill, and I'm sure they will even that much better! Yum!

I subbed dry dill in for the fresh (basically turned tablespoons into teaspoons because I didn't have any fresh and they came out deliciously! Will be keeping this one as a quick go-to side dish as 9 times out of 10 I have carrots in the fridge. Thanks Ina!
