loved mango salsa. it goes really well with seared tuna. i would use only 1 teaspoon ginger and half jalapeno next time.

I only printed this recipe, because of the salsa. I endedup making it with Rovalo, and it was very nice. I didn't use mint or jalapeno, though I might try it out with the jalapeno... I do regret adding the ginger, though. The taste was a bit too overpowering for my liking, and I wish I had tasted ginger before I put it into the salsa. It unfortunately killed the taste of the salsa a bit. But overall, it was great & I will be making it again without the ginger!

This was very tasty! I live in Texas and I don't know if they make jalapenos bigger here (don't they make everything bigger in Texas?, but I used half of one jalapeno and it still was quite a kick (it ended up being a little over 2 teaspoons. And I love spicy food! Next time I'll use even less. The dish was delicious and easy enough to prepare.

I only did the mango salsa. I thought it was o.k. - there was too much onion in it - or I didn't cook that part long enough. Also, I left out the mint - the ginger was strong enough and afraid the mint would be too conflicting.
