Having tried just about every shortbread recipe out there, these still remain my absolute favorite. Crispy, light (deceptively so, obviously, what with three sticks of butter, but hey, these are shortbreads! with nice, balanced taste: what's not to love? Chocolate glaze is a nice touch but I usually do not even bother, they are great on their own. I give Ina Garten enthusiastic two thumbs up for this recipe!

I do modify the actual preparation a bit to make things easier. Instead of making three flat disks, I roll the dough into long, round logs, 2-3 inches in diameter. When ready to bake, all thats left to do is to take the logs out of the fridge and slice in 2-3cm thick slices. No rolling, no messing with cut-outs and no loss of dough from the scraps. Each log makes one large cookie sheet of small, round shortbreads, just perfect for a whole afternoon of snacking for a family of four.

This recipe is amazing! It is so simple and yet so delicious I was amazed how they turned out. I didn't add the chocolate since I didn't have it at the time when I needed to make it and they are still perfect! Chocolate was just optional. I make this recipe ALL the time now and my father-in-law loves it so much that when I bring it to him he won't share it with anyone! LOL I find it that more complicated shapes you have to be super careful since they could fall apart so sticking to possibly circles or rectangles like she did would be less time consuming. Either way they are great! thanks Ina!

My mom loves shortbread cookies. I think it's the generation she was raised in. I make these for her all the time, and she always enjoys them.

This is an easy, delicious recipe. I'm not a huge baker, so I don't have all the fancy cookie cutters, I just rolled the shortbread into a log and sliced it into half inch cookies. Came out great and my husband ate half the batch the same day I baked them!!!

The best shortbread cookies I've ever baked. No need to add any chocolate. I didn't have any chocolate in my fridge and the cookie were still delicous. I used animal cutouts but failed miserably with them. The dough isn't really good for complicated shapes such as animals. You should really stick to the rectangular shaped cutouts. My animal shapes fell apart when I picked the up off the cutting board. But other than that these were a hit!

This is a great recipe!! So simple and easy to make. I did read other reviews ahead of time and found one person's suggestion of making a log instead of the disk, so you just slice and bake was a great suggestion. I found the dough pliable enough that you can make it into any shape. Make sure you have the butter room temperature. Also make sure you use the 3/4 pound, not 3/4 cup, there is a difference. I had no difficulty with crumbles, as I kneaded the dough, and as my warm hands worked it, the drier parts encountered enough softened butter to blend beautifully. I did also get a lot more cookies than the recipe stated. I ended up with twice as many, and did actually measure the thickness of them since I rolled dough into a log. They also freeze very nicely. The way to melt the choclate, will become my method of choice for cookies such as these. So easy!! We will definately make these again!
