I've made these twice now and I love them! The best part is how easy these wonderful cookies are, and you can stick the extra dough in the fridge and then pop them in the oven latter for a quick snack or last minute dessert if friends come over unexpectedly!

I made this shortbread and cut them into "E"s for my son's first birthday. Everyone loved them, they were a big hit.

I didn't have a paddle attachment, and it totally ruined these cookies. MUST be made with a paddle, otherwise it will be too dry and crumbley. Didn't even get to taste them, just wasted nearly an entire pound of butter.

I have been making this recipe for years. I have used different shapes and different colored sugars (i.e. little pink houses for new neighbors, etc.

I would not cut the dough 1/2 inch thick---way too thick...1/4 inch is much better. I made these for Valentine's Day and brought them to the office...raves galore. I would also agree with a previous reviewer to use fine grain or table salt instead of kosher. I also dump the dough out onto plastic wrap and bring it together with the plastic wrap instead of using more flour.

Made these this week. At first I thought it was too much flour but with patience, the dough did come together as promised. Affter that, the recipe was a breeze.

My coworkers raved about how light and flaky they were. I will make these again for Valentine's Day and maybe dip half of each cookie in good quality chocolate as a double treat.

Watch the baking time on these, they browned faster than I thought they would. Ovens can vary.

My four-year old loved helping with these. Perhaps those with little ones could keep this recipe in mind for rainy days.

Best Shortbread recipe ever! So delicious. Easier to roll in small sections. So good that a box of these is now my dad's favorite gift. Sometimes I'll make a recipe and a half and spread evenly in the bottom of a 13x9 and bake until done. Then spread jams, drizzle with chocolate, nuts, etc. It's just a great recipe to do all sorts of things with!
