Smoked Salmon and Egg Salad Tartines

Ingredients
  • 12 extra-large eggs
  • 1/3 cup good mayonnaise
  • 2 teaspoons whole-grain mustard
  • 1 tablespoons minced fresh dill, plus sprigs for garnish
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 8 slices 7-grain bread or round French bread (boule)
  • 8 slices good smoked salmon
Directions
  • Place the eggs in a large pot and cover them with cool tap water. Bring the water to a boil, lower the heat, and simmer for 5 minutes. Turn off the heat and allow the eggs to sit in the water for another 5 minutes. Drain, then fill the pot with cold water. To peel the eggs, tap each end on a board, then roll the egg between your hand and the board to crackle the shell. Peel under running tap water and allow the eggs to cool to room temperature.

  • Place the eggs in the bowl of a food processor fitted with a steel blade. Pulse the processor 10 to 12 times to break up, but not puree, the eggs. Transfer the chopped eggs to a bowl and add the mayonnaise, mustard, dill, salt, and pepper. Combine lightly with a fork.

  • Toast or grill the bread. Lay 1 slice of salmon on each piece of bread, spread on the egg salad, then garnish with a sprig of dill. Serve at room temperature.

Next time I'll halve the amount of salt; otherwise, this is fabulous. I'm not a big fan of mustard, but, in this case, it imparts great flavor without leaving a mustardy taste. What a great idea to chop the eggs in a food processor. This is going on toasted English muffins the next time I have guests for brunch. Really good egg salad recipe. Adjust for size of eggs; largest eggs need maybe 30 seconds to 1 minute more for hard cooked (all the way through). This works well with the most neutral smoked salmon you can find (use sliced lox, not the salmon that comes in large chunk pieces. I know one is cold-smoked, the other hot-smoked, but I can never remember which is which). Smoked salmon from Nova Scotia is wonderful, smooth, buttery lox. It's sold at Dean and Deluca's website/catalog if you can't find locally. The colder the water the salmon comes from, the better (colder water=higher oil content, which means it absorbs the smoke flavor more fully and consistently through the whole piece, I'm told). item not reviewed by moderator and published

We substituted prosciutto and thinly sliced swiss cheese for the smoked salmon. After cutting the rounds and lightly toasting them, we added a layer of prosciutto and swiss cheese on top of the bread rounds and put it in the oven at 350 for five minutes until the cheese melted. Then we took it out of the oven, added the dollops of egg salad and put it back in the oven (now turned off) to warm. Fresh dill from the garden on top and voila! This was a pretty basic egg salad but I really liked the addition of the smoked salmon and fresh dill. I added some minced shallot and celery b/c I cannot eat egg salad w/o either of the two. I also hand chopped the eggs which I think makes for a better consistency. I made this for our family Christmas party and everyone loved it. One thing I did that made it easier to serve as little bites was I used a small cordial glass to cut rounds out of whole-grain sandwich bread slices (very very easy!) toasted the bread rounds and used them to put the salmon & egg salad on.
