These were good. I love smoked salmon, (or any kind of salmon for that matter and I felt that it was kind of a waste of good fish. Recipe made waaaaaaay to much butter. I used maybe a third of it and I still felt like the sandwiches had too much butter. Just okay.

I followed this recipe and was very pleased with the results, although next time, I might try using sourdough bread. I feel like it would balance the smoky flavor of the fish and the spicy herbal butter better.

The title describes this recipe. Easy to make and enjoy. They received rave reviews! I used white bread sliced very thin. It accented the salmon and herb butter nicely. Served them very cold...not one left!

I have used this recipe a few times and each time am reminded how delightfully edible these little sandwiches are. When I bring them to a party I am always amazed at how quickly they dissapear, the amount of second and third sandwiches I see on peoples plates and the overwhelmingly comments I receive on such a simple ingredient dish. I use the Seeduction Bread from the bakery section in Whole Foods Market when I make these and the combination is perfection.

I did not make this recipe for a large group of people. I wanted so much to try it when I first saw it on T.V. a number of months ago. I made probably 1/5 of the recipe for a light lunch for my husband and I. Easy and great tasting. I used a good white sandwich bread and it was fine. I will definitely make this recipe in the future for a party.

These are very easy to make. I made them for my New Year's Eve party and everybody raved about them. The best part is that they can be made ahead of time.
To be honest, I have never come across a Barefoot Contesa recipie that was not delicious and EASY.
