Yum!! My first try at Risotto was Ina's Wild Mushroom & we loved it so I thought I would try this to pair with Ina's Oven Roasted Shrimp.
I made a few changes:
No leeks & fennel
1/2 a sweet onion cooked tender
1 cup of frozen broccoli pieces
cream cheese instead of Mascapone
zest & juice of 1 lemon not 2
I think you could really use any green vegetable in here & it would be excellent. Next time I will try green beans. For those people that are struggling with getting the rice tender the key is really to make sure the stock is hot (not boiling & to add the stock slowly. Exactly like Ina says, 2 ladles at a time & stir until it is almost entirely absorbed before adding more.

This risotto was the best I have ever had. Made it as Ina showed on the show using frozen asparagus spears. Wouldn't change a thing, perfect.

This was my first risotto and my new husband, who is Italian, said, "This is the BEST risotto I have ever had." Sooooo goood. Thank you, Ina. Followed the recipe to a T. I am stuffed and happy!

Fabulous. My first risotto. I added a tablespoon of my home made pesto (instead of the fennel near the end of the cooking process which added another depth of flavor. Creamy, not sticky. Ina is wonderful!

This risotto came out excellent for me!! I couldn't find frozen asparagus and didn't have any fresh, but even just with the peas, it was wonderful. It's got a nice lemony zing to it and the fennel just adds something unique. It was also really simple. Love love love!

This was completely divine! I made the recipe like Ina did on the show, not in the cookbook. (i.e. - I used frozen asparagus instead of blanching it myself It was so easy and so wonderfully delicious...there is no need to be afraid of risotto with this recipe!

My first try a risotto I've always been intimidated by it. My husband won't eat asparagus or most veggies for that fact, so I left the asparagus out. We loved it! I made it after a long day of work, and it hit the spot. Thank you Ina.

This was my first try at risotto and wow is this recipe a good one. I suggest watching Ina's video before attempting if you are a risotto newbie. My store didn't have frozen asparagus as shown in the video so I used fresh per the recipe.
