Wow, who knew egg noodles could be so full of flavor. Easy, fast and delicious. Ina, you've done it again.

This pasta was absolutely to die for! I had no trouble finding the truffle butter at Central Market (a Whole Foods-like store we have here in TX. Just like she said on the show - $9 for 3 oz! I was a bit worried that the truffle butter would have a really strong flavor, but it was delicious. We couldn't stop eating! Will definitely make this one again.

I got the truffle butter online and the pasta at Fresh Market. I think the pasta is the star of this dish. It is definately my favorite pasta now!

Wow -- all I can say is "Wow". This was such an easy and delicious dish. I found the truffle butter with no problem at Andronico's in Palo Alto. Yes, it is a bit pricey (here in CA it was $ 9, but the taste was outstanding.

The chives add a great flavor. And it all came together so quickly. We served it with dungeness crab and roasted asparagus. I would very highly recommend this dish.

This pasta has the most amazing flavor to have so few ingredients. I found the white truffle butter (3.99 and the pasta at Fresh Market. The ingredients are easy to keep on hand for a quick supper. I served the pasta with salad tossed with a lemon vianigrette dressing. YUM YUM Thank you Ina!!!

Truffle butter isn't easy to come by in rural Virginia, but this dish is well worth the trip and the price for an occasional dietary and budgetary splurge!

Not having the real thing to compare to - but from the look of Ina's I think I came up with something that works.

I took ghee - clarified butter and mixed in white truffle oil.

    1/2 cup ghee
    2 T. Truffle oil
    Blended in the food processor.

    To make ghee -

1 package organic unsalted butter (4 sticks

Over medium heat in a high sided pan - let the butter melt and come to a boil. DO NOT STIR. This is a dish that requires listening more than anything else - SO DO NOT LEAVE THE ROOM WHILE THIS IS COOKING. I can't emphasize that enough.

You will get it to a full boil - like a rainstorm on the roof - then as the air evaporates out it should get quieter and eventually end with a few "plops" - I like to let mine brown a little more than others - but when it seems to have gone quiet - take it off the heat - and again - NEVER STIR. After about 15 minutes, strain it into a Pyrex measuring cup and again, let it sit for a few minutes and then pour it into a Mason or Kerr jar and put the lid on and let it solidify.

You now have the real milk fat of butter and the air and other things have boiled off - the butter taste is more intense. I use a teaspoon on my morning toast - careful to always use a clean spoon for dipping - and don't put it in the fridge - it ruins the taste.

This pasta dish is the most delicious one I have ever tried. Loved the earthy taste of the truffle butter and the tagliarelle pasta is the best I have ever bought. It took me a while to find all of the ingredients, but it was so worth it. I will make this dish again and again.

I live in Atlanta and I went to Whole Foods this past Monday, and they were out of truffle butter. In fact, they stated that they have not had any in for months. So they suggested that I use parmesan butter It was 5.99 for 8oz... It worked just as great. I added some parmesan cheese in the mixture to help thicken the sauce. I also grilled a thick cut porkchop to go along with it!!!!! Winner for me

Loved it. A few comments. 1 I doubled the recipe from her cookbook. 2 I easily found truffle butter for $7.00 for 3 ounces. So $14 for the recipe. 3 Used fettuccine because could not find tagliarelle. 4 My husband and I loved this dinner. 5 Our teens thought it smelled funny. The truffle butter definitely has an earthy smell that is different from most pasta toppings. 6 One teen got past the smell and liked it. The other teen definitely did not enjoy it. 7 So just be aware... this might be a recipe you love or don't. I loved it. Although when I step on the scale tomorrow, I might have second thoughts. This is not for the timid.... it's really rich! Enjoy!
