    These cookies were really easy to make, and did look pretty. They didn't taste like much, but I guess neither does marshmallow. They were the least favorite of my Christmas tray. I think kids might like them, but most adults don't. I don't think I'll be making them this year.

    I was surprised at how easy these were to make. As another reviewer stated, I was going to do the "smore" thing, but didn't have any graham crackers. I did have coconut, however, got wound up in a phone call and burned most of it while toasting. Not a bad thing, though, because the salvagable portion tasted like toasted marshmallows so I used that on the bottom (over a piece of parchment and topped the soft marshmallow with mini semi-sweet chocolate chips. Maybe I didn't beat the mixture long enough, but I had no problem spreading it - didn't even neec the "wet" fingers as Ina suggested. Yum! Truly like smores without all the mess. These do last a long time if cut, put into cupcake papers and wrapped.

    When I made these i covered them with graham cracker crumbs instead of coconut. Then I drizzled melted chocolate over the top to mke little s'mores. Really good, but I made myself sick!

    I had no idea how good these would be. There easy, fast and the only fat is in the coconut. I'm going to try dipping them in a soft caramel next time. You're the best!!!!

    These worked well although mine were a bit sticky to try to spread out. I think the trick is to put it in the sheet pan while it is still pourable. I will definitely use this for the holidays.

    I was a little concerned about removing these marshmallows from the pan after reading some of the reviews, but after leaving the pan alone for about 20 hours and simply inserting a knife aroun the edges to loosen the marshmallow, the removal from the pan was a cinch. I then rolled the edges in more toasted coconut, and voila, a beautiful dessert to take to Thanksgiving brunch.

    I highly recommend these treats not only for their beautiful presentation, but for their light sweetness and interesting combination of textures.
