I love marshmallows and coconut. This is the ultimate marshmallow I've ever tasted in my life! I've made them time and time again and gotten rave reviews from everyone who has eaten them. God bless the Contessa for doing this recipe!

This was so much easier than I ever dreamed. I have already figured out several ways to embellish, with pecans or drizzled chocolate. I have brought this treat to work or family get togethers several times

no one believes you can make marshmallow at home. i didnt do the coconut, i just made plain old marshmallow and it is amazing. you can make it to the consistancy you like by mixing less.

I used a cookie cutter to make them into heart shapes. So cute!

Although these look very pretty, they are not as easy to make as they seemed on Barefoot Contessa. Getting the mixture out of the mixing bowl and on top of the toasted coconut that is placed on the bottom of the pan was quite a chore. You have to wrestle it all the way! You really have to love marshmallows to make this worthwhile to make because the flavor is a little bland. You might try some of the suggestions posted by other raters to make this more lively. This was a one time recipe for me. Also, several raters indicated they had difficulty getting them out of the pan. I let mine sit out for 24 hours and had very little trouble cutting them into squares. So if you are making this, I do suggest letting them sit out for a good long time before you cut them.

I don't like coconut, but even plain they are fantastic. Good luck keeping your fingers out the bowl while they mix.

I was never a fan of marshmallows, then I saw Ina make these and decided that looked like fun to make with my grandchildren. We all loved them, it's a gotta try recipe for all.
