I was at my aunt and uncle and he was talking about how he used to buy toasted coconut marshmallows and how they don't taste the same. I went online and of course the contessa had a recipe. I made him a batch for fathers day and the family couldn't get over how great they were!!! I am now making them again to bring to a 4th of july bbq at their house. My uncle wanted me to try them with toasted almonds but my choper broke and I can't get them fine enough but I know he will still be happy with the coconut ones!!!! once again the contessa comes through!!!!!

Awesome recipe for home, parties and bake sales and class. I teach cooking and this is a great recipe for kids to learn candy skills. I used some of the suggested toppings from other earlier reviewers! The toasted coconut was the most popular! Great lesson and the talk of the halls.

This was fun to make with my little girls. It is magic!
I added toasted, sliced almonds with the coconut. MMMM ... We love nuts so this made it for us. It is worth it to leave them overnight as it is easier to cut then. (It is sooo hard to wait! I recommend lining the pan with parchment or wax paper so that you can lift the marshmallows out of the pan before cutting them; that also makes it much easier.

Although these do taste very good, I had a difficult time getting them out of the pan. The recipe is actually very similar to Martha Stewart's recipe. Martha suggests to oil the pan and line it with foil. This is a crucial step that effects the success of these marshmallows. I ended up scraping them out of the pan and throwing them away. It was very dissapointing after spending my time and ingredients making them.

extremely easy, extremely delicious, extremely appreciated. i would recommend using 3/4 tbs vanilla, though... vanilla's sort of expensive, and one tablespoon tastes a bit excessive.
