Can you say FAB! These soo delicious. I made it as directed the first time, the second time I changed the Vanilla extract to Almond extract and still wonderful. I also took a crack at making homemade graham crackers so we could have S'mores. I recommend these to be eaten as is, they jus POP so much better in your mouth all by themselves. THank you and these will be a new holiday treat.

I made these this morning, they turned out great! I did reduce vanilla, other reviewers mentioned 1 TB was too much.

NO EGGS! My toddler granddaughter is allergic to among other things, eggs. This recipe will be good for her. So glad I found it.

No store bought marshmallow could ever compare to these little bites of heaven. They are sweet and gooey on the inside with the crunch of the toasted coconut on the outside... A little messy but worth it. Thanks again Ina for another great recipe!!

I'm not one for coconut, but I do love marshmallow. I had so much fun making this with my new KitchenAid stand mixer. When I first made this, I took it in to work and shared with my coworkers and they all loved it and could not believe that I made it and that it was homemade. I'm always asked to make this, so what I do is make it for their birthdays as their gift.

Easy and good. The goo soaks off of everything, but it got a bit messy when it was climbing up my beaters after about 6 minutes. You have to attend the mixing part pretty carefully or else say good by to your mixmaster and put the vanilla in before it gets too thick.
Toss shredded coconut in a saute pan on the stovetop to toast and brown. It will make your kitchen smell so nice too! I made half the recipe with coconut and half plain. The coconut gives a nice crisp texture and a nutty flavor.

When Ina made these on her show, she said there would be tons of cookies and cakes at the bake sale she was going to, so this would be something different. I had a bake sale today, and i remembered these and decided to try them. They were so easy and so delicious. follow her directions EXACTLY, and they should com out great.

Very good and unique! I made half with coconut and half with just powdered sugar. I am not crazy about coconut but it made the marshmallows much better. The texture of the coconut is great. The mixture does smell while mixing, is very messy and toasting the coconut can be time consuming but all steps are very do-able and worth it. This allowed me to take something different to the bake sale!
