I never knew making marshmallows could be so easy.

However, there were a few things I'd change about the recipe.

First of all, it doesnt take 15 minutes in the mixer; anywhere between 7-9 minutes was plenty, and I could see my KitchenAid mixer struggling a little at that point, but it was done.

Use a glass pyrex dish to make these...and use plenty of PAM, they'll come out with almost no difficulty!

    I'd make them again!

My Son doesn't care for coconut, but loves S'mores. I crushed up graham crackers and put in the bottom of the pan, then poured the marshmallow on. I chopped up some chocolate and spread all over the top. Instant S'more. When you cut it into squares, it's just the perfect bite.

These are great if you just like to eat raw marshmallows. They do not work well for s'mores, the melting point is too low, can't get them toasted.

Each year I bake desserts at Christmas and give them to all of my friends and each year I try all new things to include in the baskets....except for these, which are included EVERY year! I get the most compliments on these, and while making homemade marshmellows with toasted coconut would scare almost anyone away, the recipe really is relatively simple for such a "sophiticated" dessert! Great recipe!!

This recipe is soooooo easy and delicious. I've made this many times for family and church functions. I'ts always a hit. I'm printing many copies now to give at church. Tried several different review comments/suggestions, all were great.
Not one to take time to post a review, but had to give Ina kudos for this easy show stopper .

i follow the directions, the marshmallow mixture came out great. But it only put about an inch in the pan.
Why didnt this come out about 2 inches thick like the show?

Do I need a larger mixing bowl?

Used really good vanilla, but don't really care for the flavor of these things. The vanilla flavor is too strong. I set the timer and took them out of the kitchenaide at 15 minutes, and the mixer was HOT. They were messy going into the pan, and I wished I would have oiled or greased the pan first. They smoothed down okay with wet hands. They just taste okay - nothing I'd rave about. I'm surprised by the rave reviews this recipe received.

My Kitchen Aid mixer is only about a year old and the 15 minutes of mixing the mallows was pretty hard on it....plus the batter got too stiff, it was really hard to get out of the bowl and my coconut in the bottom of the pan shifted around alot depsite my best efforts to keep it in place. The marshmallows ar still drying so I haven't tasted them yet, but they look great! Next time I will probably leave them in the mixer for about 10 minutes and see how that goes.

These are just amazing. I have always wanted to make marshmallows but believed it would be messy and difficult. This was so easy! And you only use one pot, one bowl and the glass dish. I will grease the dish next time per other suggestions and see if they come out more easily. Also they really DO need to sit for at least 12 hours before you cut them. I'm making them again tonight and serving them after a cheese course at a dinner party tomorrow evening. I'm going to top them with chopped chocolate and leave the bottom toasted coconut. Thanks for such a great recipe!
