    I made these as a trial run for Easter and used a jellyroll pan (lots of cooking spray and then cut out bunny shapes and coated them in colored sugar... Absolutely adorable and so much tastier than the real Peeps!

    This is the simplest marshmallow recipe, I think, in the world! I've made all kinds of flavored mallows including chocolate and peppermint and this recipe always works and whips up in the Kitchenaid in no time. Tonight I'll be using this recipe to make homemade "Peeps"! Also, I accidentally tried these with some artificial extract instead of the real thing and they were gross, gross, gross. Don't use the artificial stuff!

    fyi - just used 2 packets of oetker brand gelatin. I'm still waiting for the marshmallow to dry overnight but the taste and consistency is perfect!

    i love this recipe..yummy... . i used cooking spray on the 8x12 inch pan...spray all over it to help it not stick when coming out... be generous with the spray... and do not wait after you stop the mixer to scoop the mixture on top of the coconut in the pan... hot soapy water made for easy clean up... a little cooking spray on the knife now and then helped make cutting easy...TO TOAST THE COCONUT i put the coconut on a cookie sheet and into a 300 degree oven for 10 minutes or until it became light brown made this easy also...

    everyone i give this recipe to .... loves this recipe..... enjoy!!!!!!

    ...I used Vanilla paste and a 1/2 tsp. of Almond extract....

    I am not a candy maker at all, but this recipie is soooo easy and it can be tweeked anyway you want. I made a batch of "grown-up" marshies, by adding lemon zest,lemon flavoring, instead of vanilla, and some Limoncello..WOW- sooo good!! Some of them I dipped in chocolate..a big hit at our annual ladies lunch! The possibilities are only limited by your imagination!!!!! Thanks Mrs Garten for yet another delicious recipie!!!!!!

    I've been making these for a few years now and have been experimenting with them (not everybody likes coconut so why exclude them. Some of my adaptations include adding several teaspoons of cinnamon while whipping the sugar mixture and adding cinnamon to the powdered sugar at the end, adding cocoa powder to the whipping stage and dipping them in bittersweet chocolate, and adding extra vanilla and rolling them in vanilla sugar (comes out like a vanilla peep. Folks get a variety of them when I give them christmas cookies and boggle over the effort I must have put into them, but its probably the easiest part of the present.

    I've been making this recipe for 3 years straight now, and it is a huge hit everytime. Last year I dipped 1/2 of each marshmallow in dark chocolate and they were an even bigger rave. It's super easy, 1 pot & 1 bowl and let it sit for 8 hrs. We make them every Christmas and put them in clear celophane bags with festive ribbons and I get asked for the recipe over and over. Enjoy!

    We made these as a "test" batch for future holiday gifts. I did half in crushed candy canes and half plain. I wish I had read all the reviews first because the hint about smoothing out the top with wet hand would have helped. Still, easy to do and set up quick. I plan on putting some in a baggy with some homemade hot chocolate mix and give to school bus driver etc. My kids had more fun licking the spoons than the actual making part!
