This was a huge hit at a "Trick or Treat" Party today in my office. The recipe was just as quick and easy as stated. As always, Ina mastered another great treat!!

If you tried this recipe and it didn't come out well, try again. I'm not usually good at making anything candy-like but these are incredible. Not only are they super easy to make but I also know exactly what is going into them unlike the store bought. I also made a plain batch and dipped them in chocolate on the bottom and then into graham crackers. They are amazing and will make great christmas gifts for the neighbors.

I was very excited to make this recipe but when I actually made it, it tasted very much like store bought marshmellows to me, which seemed like a waste of time and extreme messy clean-up.

These marshmallows are so much fun to make. I love how Ina gives a great base recipe and then encourages us to make it our own. I can't wait to make these again and try something different besides the coconut since my loved ones don't care for it. I would love to try something chocolately next time liked crushed oreos. YUM!

I made these wonderfully delicious marshmallows for my friends daughter's college graduation party. They were so surprised to find out they were homemade.
They are so much better than the store bought worth the effort!!
I did have a couple of suggestions. First about mixer over heating, I think when the mixer starts to over work that is an indication that the product is done. I didn't let it go on long enough to over heat, I stopped it when I heard it start to over heat and they were perfect. Also I didn't use powdered sugar for the edges. I used the excess coconut( that made more sense to me. They really are yummy!!

I nixed the coconut and used this as a base recipe for vanilla marshmallows- I used the recommended 1T of extract but added a scraped vanilla bean as well- I'm a big fan of vanilla so I think I'll do 2 scraped beans next time. Awesome basic recipe, easy and quick- the only thing that takes considerable time is the cooling!

i had wanted to try these for a while. when i did, i wasn't dissapointed. they were delicious. i drizzled melted chocolate over them. it is hard on a mixer tho, i used a kitchen aid and it smelled hot. however it is 25 years old. i wont mix them for the recommended time next time. they were a little too stiff, but i will be making them again
