Tomato Feta Salad

Ingredients
  • 4 pints grape tomatoes, red or mixed colors
  • 1 1/2 cups small-diced red onion (2 onions)
  • 1/4 cup good white wine vinegar
  • 6 tablespoons good olive oil
  • 1 tablespoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1/4 cup chopped fresh basil leaves
  • 1/4 cup chopped fresh parsley leaves
  • 1 1/2 pounds feta cheese
Directions

Cut the tomatoes in half and place them in a large bowl. Add the onion, vinegar, olive oil, salt, pepper, basil, and parsley and toss well. Dice the feta in 1/2 to 3/4-inch cubes, crumbling it as little as possible. Gently fold it into the salad and serve at room temperature.

Made this today for a fall picnic, cut it 1/4 of the recipe. I severed on top of a mix of baby spinach and bib lettuce. I didn't have any good white vinegar and my champagne vinegar had sediment in it. This is strange but I used balsamic truffle vinegar. WOW, it was incredible. Very tasty! The only change I made was a little less basil (because I just didn't have quite 1/4 cup and I only used one onion becuase I thought two might make it a little overpowering. I would recommend adding one and then mixing it up to see if you need the second, because I definately feel like I didn't miss the second onion. I'm making it for a dinner party tomorrow night and I mixed everything together tonight except for the feta which I'll add tomorrow night. This salad is GREAT! My sister made it for a Mother's Day BBQ & it was wonderful! I put the leftovers over some baby spinach for a great lunch & enjoy the next day as well. Fabulous!
