Tomato Feta Salad

Ingredients
  • 4 pints grape tomatoes, red or mixed colors
  • 1 1/2 cups small-diced red onion (2 onions)
  • 1/4 cup good white wine vinegar
  • 6 tablespoons good olive oil
  • 1 tablespoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1/4 cup chopped fresh basil leaves
  • 1/4 cup chopped fresh parsley leaves
  • 1 1/2 pounds feta cheese
Directions

Cut the tomatoes in half and place them in a large bowl. Add the onion, vinegar, olive oil, salt, pepper, basil, and parsley and toss well. Dice the feta in 1/2 to 3/4-inch cubes, crumbling it as little as possible. Gently fold it into the salad and serve at room temperature.

Made this today for a fall picnic, cut it 1/4 of the recipe. I severed on top of a mix of baby spinach and bib lettuce. I didn't have any good white vinegar and my champagne vinegar had sediment in it. This is strange but I used balsamic truffle vinegar. WOW, it was incredible. Very tasty! The only change I made was a little less basil (because I just didn't have quite 1/4 cup and I only used one onion becuase I thought two might make it a little overpowering. I would recommend adding one and then mixing it up to see if you need the second, because I definately feel like I didn't miss the second onion. I'm making it for a dinner party tomorrow night and I mixed everything together tonight except for the feta which I'll add tomorrow night. The recipe looks good...except for all of the added salt. Between the feta cheese and salt, there is over 1200mg of sodium per serving. Marinated tomatoes do not need that much salt for flavor. Try adding some garlic and green onions. item not reviewed by moderator and published
This is the most amazing salad! Took it to a family large gathering and this salad was the only one that did not have leftovers. This was just delicious. It was very easy to prepare if you know Rachel Raye's trick of cutting grape tomatoes. (Using the lid of a yogurt or other similar lid, lay the tomatoes on the lid, cover with another lid the same size, apply light pressure while cutting horizontally with a serrated knife.) I made this for a barbecue this weekend--absolutely wonderful! The flavors were so bright and delicious, and the presentation was just gorgeous with the red and green. I do have one negative comment, and that's about the cost to make it: between the tomatoes (that's a LOT of tomatoes!) and the feta, it was a bit of a budget buster for me. Of course, if I had waited another month, tomatoes would be in season up here and the issue would be moot. Still, the final product was worth it. This salad is simple, looks great in the serving bowl, and everyone agreed it was wonderful! The recipe appears slightly different in the Barefoot at Home Cookbook, and here are the modifications I made just because I didn't want to buy a whole lot of extra ingredients: -shallot instead of a red onion (for a more mild onion-y flavor) -1TB red wine vinegar + 1TB balsamic vinegar instead of champagne vinegar or white wine vinegar - no salt (the feta is pretty salty on its on) My only issue was that the juices ran all over the plate, but most people aren't as OCD as I am and probably wouldn't mind :) item not reviewed by moderator and published

Took this yesterday to a Bar-B-Q. Everyone loved it. I've had so many boring pasta salads lately but this one has so much flavor. If you love the bold flavors of feta, calamata olives, and sundried tomatoes, you will love this salad. I agree that the salt should be less. I used 1/2 tsp. kosher salt and it was plenty salty - and I like things salty. Also, used my garden tomatoes. Made extra sauce to freeze - will go wonderfully on plain pasta for dinner in a hurry. I saw that someone thought it was bland, but I used all fresh herbs which probably made a difference. I made this salad for company and it was a huge hit. Even a friend who is not a big fan of tomatoes was scooping it up with bread and eating heartily. I did fix it about an hour beforehand; kept tasting and stepping up the flavors slowly until I got it where I wanted it. This was good. Although instead of making the vinegrette, I just used mY fav. Italian dressing for an easy substitute. I also added shrimp and it turned out great! Made this for a Memorial Day BBQ yesterday and it was a huge hit. I always have to tweak a little so I added about a cup of It added another layer of texture and a little sweetness. My only caution is to not make it too far in advance as the salt pulls the moisture out of the tomatoes and turns the basil dark - a couple of hours is fine but no more. Do not refrigerate. I felt like I was in a restaurant with this salad! I kept the tomatoes at room temperature after tossing with the onions, herbs and dressing and let the flavors "marry" for a couple of hours, then added the feta just before serving. Presentation was incredible on a bed of butter lettuce and it helped soak up the extra vinegraitte. I had to use dried basil, but the flavor was still incredible.
