Tomato Feta Salad

  • 4 pints grape tomatoes, red or mixed colors
  • 1 1/2 cups small-diced red onion (2 onions)
  • 1/4 cup good white wine vinegar
  • 6 tablespoons good olive oil
  • 1 tablespoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1/4 cup chopped fresh basil leaves
  • 1/4 cup chopped fresh parsley leaves
  • 1 1/2 pounds feta cheese

Cut the tomatoes in half and place them in a large bowl. Add the onion, vinegar, olive oil, salt, pepper, basil, and parsley and toss well. Dice the feta in 1/2 to 3/4-inch cubes, crumbling it as little as possible. Gently fold it into the salad and serve at room temperature.

    Very easy and good, refreshing salad! I would half the onion amount next time though :
    Had family come in from out of town and made a number of "side" dishes to cover everyones pallet. I found that this dish was the star. I even made a second batch and there weren't any leftovers.

    Summertime must have! Incredibly easy to prepare and transport. 4 pints makes a lot, but is so worth it for a crowd. I made it the night before and added feta just before serving. Delicious
    Very tasty! The only change I made was a little less basil (because I just didn't have quite 1/4 cup and I only used one onion becuase I thought two might make it a little overpowering. I would recommend adding one and then mixing it up to see if you need the second, because I definately feel like I didn't miss the second onion. I'm making it for a dinner party tomorrow night and I mixed everything together tonight except for the feta which I'll add tomorrow night. I hope it's still good tomorrow night and I have a feeling it will be since it'll have time for the flavors to marinate. Another great Ina recipe!
    This salad is GREAT! My sister made it for a Mother's Day BBQ & it was wonderful! I put the leftovers over some baby spinach for a great lunch & enjoy the next day as well. Fabulous! I had to come get the recipe, will be a summer staple. I can't wait to make this with fresh tomatoes & herbs from the garden.
    This was a wonderful salad.....if you decide to make this please, please, please use only fresh parsley and basil, dried herbs will not cut it in this recipe! Perfect summer salad!
    This recipe is totally yummy. I left off the onion, because I don't like raw onion. I also cut the salt in half. Feta is super salty, so I was afraid it would be too salty. It was fantastic!
    This recipe is AMAZING! I used red and yellow grape tomatoes and did NOT add the parsley. It is a pretty salad that smells unbelievable. BUT the taste is the best!!! BIG hit at a party we had. Everybody asked for the recipe!!!

    The recipe looks good...except for all of the added salt. Between the feta cheese and salt, there is over 1200mg of sodium per serving. Marinated tomatoes do not need that much salt for flavor. Try adding some garlic and green onions.
    This is the most amazing salad! Took it to a family large gathering and this salad was the only one that did not have leftovers. I did mix it up a little and used red and yellow cherry tomatoes for additional color. This is my new "go-to" salad recipe. I highly recommend trying this. You will not be disappointed!
    This is an absolutely perfect summer recipe. In Ina's book, the quantities for this recipe are halved and I think it is the perfect amount. Highly recommend!

    This was just delicious. It was very easy to prepare if you know Rachel Raye's trick of cutting grape tomatoes. (Using the lid of a yogurt or other similar lid, lay the tomatoes on the lid, cover with another lid the same size, apply light pressure while cutting horizontally with a serrated knife.) I loved the basil and parsley.
