    I use this recipe often because it is so easy and healthy, I omit the oregano since its not my favorite and it overpowers. I use sliced tomatoes and sliced eggplant. You can serve as an appetizer, side dish, or place 3 or 4 pieces on pasta for a tasty meal.

    This recipe is super simple, and delicious. It's very pretty on a nice white serving dish at a party too. The only thing I would recommend is to go easy on the salt. The recipe calls for a good sprinkle before putting the tomatoes in the oven. I think I added way too much, because mine came out rather salty. I made again omitting the salt and it was much better. Makes a great side or appetizer!

    Boyfriend & I loved this recipe. I already had pesto in the fridge so it was very easy to prepare this. (Store bought pesto would be fine for this recipe I followed the recipe exactly with local grown tomatoes-it was so delicious. Served the tomato slices on toasted bagettes. Fantastic! The pesto recipe here makes alot so you could easily use the leftover pesto for another dish or freeze it. This recipe is a keeper.

    Loved these. They were quick and easy. I used store bought pesto to save time. We served them as a side to roasted chicken. Will be making these again soon!

    OUTSTANDING!!! The recipe for the pesto is the best I've found...then add the yummy tomatoes and WOW!! Over the top delicious! I did add a slice of fresh mozzarella to each tomato over the pesto---my family was fighting over the last one!!! Very classy appetizer!! Thanks again Ina!!!

    This was a good way to make use of tomatos. Made the pesto for the first time and was pleasantly surprised. In future will use a little less oil or more basil. Love having different ways to make veggies. I am now a pesto fan..
