I served this to guests, one of whom doesn't eat red meat. They were astounded to learn it was turkey. I use ground turkey rather than turkey breast. Turkey breast meatloaf looked "white", whereas the ground turkey that includes dark meat looks like meat meatloaf. I've halved the recipe and recently quartered the recipe, which successfully served 3 people--no leftovers!

This was a great turkey meatloaf recipe even with the added step of frying the onions first. I changed the receipe to 3 lbs of meat which makes 2 loaves of meatloaf-which might seem like a lot but you'll eat it all so fast you'll be glad you made 2. If you do want to half the recipe, use 1.5lbs of meat. I also substituted 1/2 a cup of wheat germ for the bread crumbs and added peas to make it healthier.

As god as my witness, I'll never eat another person's meatloaf again.

Half a recipe was enough for the two of us and leftovers. Very moist and made a good sandwich the next day.

This is a fabulous recipe. I have made it at least 10 times. One caveat-- do NOT use extra lean (1%fat turkey. It will be dry as dust. I made this mistake once.
You can divide the mixture in half and freeze half uncooked. Then thaw and bake as directed.

My family has me prepare this recipe at least 2 to 3 times a month. Whenever I say I am making this, they respond with a huge "YES! Since making it about 3 years ago for the first time there is no other meatloaf I can make that compares.
