This is a really good recipe...I've made it a few times successfully, sometimes as mini-meatloaves. Check out Ina's official website - she explains that the recipe was originally written for dark meat turkey, not white. When the recipe was written, ground white turkey was not readily available like it is today. For those of you who think it's kind of flavorless, that's probably where you went wrong. Unfortunately, if you do the research, ground dark turkey meat is just as, if not more, fatty than regular old ground beef.

Like some other reviewers I substituted 1/2 the meat for Italian sausage and doubled the thyme and worchester sauce and added some dry mustard powder and red pepper flakes and a friend of mine said to add about 3/4 to 1 cup grated parmesan cheese. What the heck? It was delicious....but then I was thinking it really probably wasn't Ina's recipe at all anymore!

i made a major change, - a mix of ground beef, pork and italian sausage instead of turkey-, and a few italian adjustments to the recipe, but basically i used ina's recipe.... beautiful meatloaf, tasty and juicy!!!

I saw this on Ina's show the other day and thought that it looked great. At least the folks eating it sure seemed to enjoy it. The next day Costco had 5# of ground turkey on sale..........so I thought that it was meant for me to do this recipe. I agree that the recipe feeds a crowd. I took half of the recipe and froze it.
I hadn't seen the trick about the pan of water in the oven. My mother-in-law had shown me her method of drawing off the grease about 2/3rd of the way into the cooking and replacing it with a cup of boiling water (which works great. Anyway, the loaf (remember 1/2 the recipe was done on time and didn't "crack". Had more than enough for five folks.
The problem was that there just wasn't any "taste". I think that I will add the spicy sausage like one of the reviewers said the next time that I do the recipe. Everybody except my mother-in-law said "Where's the Beef?". Mother-in-law is on a diet and liked the low fat aspect of this recipe. I also could not taste any of the thyme (and I doubled the amount.
This one isn't up to Ina's terrific brownie recipe.
