    easy to prepare and wonderful hot or cold. Leftovers make great sandwiches, especially for the beach.

    i made a major change, - a mix of ground beef, pork and italian sausage instead of turkey-, and a few italian adjustments to the recipe, but basically i used ina's recipe.... beautiful meatloaf, tasty and juicy!!!

    I saw this on Ina's show the other day and thought that it looked great. At least the folks eating it sure seemed to enjoy it. The next day Costco had 5# of ground turkey on sale..........so I thought that it was meant for me to do this recipe. I agree that the recipe feeds a crowd. I took half of the recipe and froze it.

    I hadn't seen the trick about the pan of water in the oven. My mother-in-law had shown me her method of drawing off the grease about 2/3rd of the way into the cooking and replacing it with a cup of boiling water (which works great. Anyway, the loaf (remember 1/2 the recipe was done on time and didn't "crack". Had more than enough for five folks.

    The problem was that there just wasn't any "taste". I think that I will add the spicy sausage like one of the reviewers said the next time that I do the recipe. Everybody except my mother-in-law said "Where's the Beef?". Mother-in-law is on a diet and liked the low fat aspect of this recipe. I also could not taste any of the thyme (and I doubled the amount.

    This one isn't up to Ina's terrific brownie recipe.

    Probably not that great because it was turkey and not ground beef. The flavor was pretty nice, but overall it just wasn't as good as i thought it would be.

    As the title states, I have never made meatloaf before and never really liked it, but this recipe looked interesting enough to try. So I made it and invited the in-laws over and it was a smashing success! My mother-in-law kept asking how I got it so moist and flavourful. Even I liked it and to know that it is healthier than beef is an added bonus! Thanks Ina for your delightful show and spectacular inventions!

    Great recipe. Usually I don't like turkey in place of my beef, but this was divine! Really good combo of flavors and not too hard to make. I like the fact that I could find all these ingrediants at home in my 'fridge and panty. Well done, Barefoot Contessa!

    First off, if you aren't a family of 6... cut the recipe in half. I'm just cooking for me, so I used 3 lbs of meat and scaled the rest of the ingredients accordingly. It's still way too much even for leftovers!

    I thought the meatloaf tasted good but it could certainly use some more spice. I couldn't taste the thyme at all (it needs more, or maybe my taste buds are just burned out from all the hot sauce I normally use. I think I'll toss some red pepper flakes into the mix next time.

    With 3 lbs of meat mine took about 2 hours & 15 min to reach 160. So plan on longer than what the recipe states. Also, even though I put the pan of warm water in the oven below it, mine still cracked on top.

    Overall it was good. I'd make it again.

    I changed this recipe a bit; instead of using all turkey, I used 2/3 turkey and 1/3 mild italian sausage to give it a little kick. Came out great! Careful not to overcook, however - turkey meatloaf has a tendency to become very dry during reheating.
