    Absolutely perfect! Everyone loved these. Part of my family likes a crisp cookie and part likes a soft cookie - these are the perfect combination of both! Crisp on the outside and soft on the inside! I will never try another ginger cookie recipe.

    This is the first, and likely the last, ginger cookie recipe I've ever made!!! I followed the nest ructions exactly, and could not be more pleased with the result!!!! Just amazing!

    I have been making gingerbread houses for years, so I've tried piles of recipes. This is hands down the most edible gingerbread cookie recipe I've tried to date. My husband did not actually purr over them, but it was a near thing. My daughter and I actually whipped up a batch to make something like lepkuchen hearts for a school presentation on Christmas in Germany. These aren't exactly lepkuchen, but with the ingredients I have on hand they make a darn fine substitution, and quite frankly they taste better.

    To make our faux cookies we chilled the dough for about 30 min, then rolled it out on a sugar covered board, sprinkled more sugar on the top and then we used cookie cutters to make large heart shaped cookies. OMG they are Devine, and our batch didn't have nearly the amount of crystallized ginger in it that the recipe calls for, a 3oz bag of that stuff costs about $4 here. So now I'm looking over Alton Brown's recipe for homemade crystallized ginger...

    Amazing cookies! By far the best ginger cookie I have ever made. They were so easy to make and came out crunchy on the outside and soft on the inside! Love love!

    These cookies are absolutely wonderful!! This was my first time making ginger cookies and I was nervous that they would be over-powering and give you that tingling feeling that some ginger cookies can leave in your mouth. They are light and wonderfully flavored and so easy to make. Definitely a keeper recipe:.

    HOLY COW BATMAN!! So yummy : I only used 1 cup of the crystallized ginger as to not kill everyone that was new to ginger, and it was perfect!!! I will be making these crispy on the next batch and scooping a little bit of lemon sorbet on it. Thank you Ina..I always watch you when I come home from work and it just makes me feel like I'm home :

    If you like crystallized ginger enough to eat it straight out of the bag, then these cookies are for you. The ginger taste is so strong and over-powering, there is no flavor at all except ginger. I followed the recipe to the letter, unlike many of the five-star reviewers.

    Oh they are so delicious, love the way the crystallized ginger melted into the cookies. It's like a ginger bread/cookie, so soft and moist inside. I wouldn't change a thing! Will be making these again.
