    This recipe has been resting in my cabinet for the last five months since I made it with potato vodka so it would be gluten-free. Meanwhile, I will use up my other vanilla extract while this prepared one turns dark.

    Any Vodka Not Flavoured works Fine. Also,If Vanilla Beans are Dried Out,Might Be Able to Use open slit down North to South into a Big Jar of Sugar. Flavours and Makes "Vanilla Sugar".

    Just a question... Does it matter the quality of the vodka you use? Is it ok to use cheap vodka in this?

    Homemade vanilla extract is so easy and delicious!

    The most important part is making sure you have the correct vanilla bean to alcohol ratio. According to the FDA, a single fold extract should use "13.35 ounces of vanilla beans per gallon of extract is single fold (single strength vanilla extract". This equates to 5-6 whole vanilla beans per 8 ounces alcohol. Therefore if you use a pint sized bottle of vodka, 10-12 vanilla beans would be needed. If using a standard 750 ml bottle, 15-18 whole vanilla beans would be required. Any less than this is essentially making vanilla flavored vodka.

    Shopping for vanilla beans online will also provide significant savings (beanilla has beans for less than $1 each.

    I started my home made vanilla extract from Ina's recipe in 2001. It is fabulous! I have a large jar filled with vanilla beans and vodka that I pour into a smaller container to use on a regular bases. I simply add more vodka and vanilla bean every once in a while. The vanilla bean is amazing and so easy to use after it has been soaking in vodka. Simply cut off the tip and squeeze out the beans rather than having to cut it open and scrap! NOTE: It took about 6-8 months of marinating before I started using it.
