This is a delicious vinaigrette. It also works great on potato salad, great for summer time since you don't have to use mayo.

Excellent, and super easy. I was out of champagne vinegar and garlic, so I used balsamic vinegar and the juice of half a lemon instead and got rave reviews from my guests (one of whom is a chef and asked for my recipe!. Now that I have this very versatile recipe I'll never use bottled dressing on my salad again.

Be sure to measure: I tried to "eyeball" it recently and it just wasn't the same. Also, good quality EVOO is a must. I tried it with light olive oil. Wouldn't recommend doing that.

Good but not excellent. Fine for a weeknight especially if you don't like to use bottled dressing.

This is wonderful! I used Trader Joes "Orange Muscat Champagne" vinegar. Wow!!! My picky father came for dinner and he generally complains if I dress the salad. This time, he raved about the salad with this wonderful vinaigrette!

I LOVE this quick and easy dressing! I had to look at 2 stores to find the Champagne vinegar, but totally worth it because it gives it a great flavor. Definitely suggest CA olive oil, too. It is delicious! I have made dressings with red wine vinegar and just whatever olive oil I had on hand, but they were not nearly as flavorful as this one. I've never gotten a recipe from Ina that hasn't been amazing!

If you don't like vinaigrette dressing, you won't like this. Since I'm just so-so with it, I proceeded with caution especially since several others had some rather negative comments about it. I was worried it might be too oily, so I started with just 1/4 cup oil, but found that it was way too vinegary by doing that. So I ended up adding more oil, getting close to the 1/2 cup suggested in the recipe. I didn't have champagned vinegar in the house so I used red wine vinegar. I can't imagine that that would have made that much difference. All in all, I'd say it was fine. I'm getting to the point where I don't like to buy bottled dressing anymore, so I'll add this to my collection of homemade salad dressings.

I used citrus champagne vinaigrette and toned down the olive oil (personal preference. It was perfect! Great, simple recipe.
