    I couldn't find champagne vinegar anywhere here, so I substituted white wine vinegar, and still it was perfect! Flavors are perfectly balanced, will be making again and again!

    I made this and it came out pretty good using average quality dijon and olive oil. Could someone recommend a good quality olive oil and dijon mustard?

    Delicious & a Versatile Vinaigrette

    This is a simple and a lifesaving recipe. I ran out of dressing and luckily found most of the ingredients in my pantry. I used regular salt & balsamic vinegar for a salad of greens & other vegetables with garbanzo beans. I also ran out of dressing for a salad of avocados & onions on a bed of spinach leaves, I used lemon juice (to keep the avocados from turning brown in the dressing as well as balsamic vinegar to taste. Both versions turned out to be great but the one with lemon juice got rave reviews. I'm going to try it on green beans and asparagus next.

    This is a great go-to dressing recipe. Perfect with mixed spring or baby greens with some added vegtables. This was great served along side a bacon and asparagus quiche for our Mother's Day brunch.

    You have no idea how easy and delicious this is! I realized we were out of salad dressing so I looked up this recipe on a whim and discovered I had everything I needed right in my pantry!

    Just fabulous! I now make this dressing EVERY time we want a salad. Just be sure to whip up that emulsion before adding the olive oil and I agree with Ina; a California oil does the trick.

    This was so easy to make and had lots of flavor. I didn't have any dijon mustard so I used whole grain mustard instead. I worked perfectly. I also used my food processor and added the oil while everything was spinning around. It made a beautiful dressing. My husband added blue cheese and tomato to his salad and he thought it was very good.
