I have made Bolognese with carrots and celery and was surprised at how flavorful this was. I did not have lean meat and used what I had (80% lean ground beef. I also used large shells. I did not drain all the fat. I like the flavor it put into the dish. I also added about ½ pound more meat in that my family loves meat!
This was quicker than expected and great the next day. I will add this to my quick meal arsenal

The amount of oregano was overwhelming. We couldn't eat it.

I agree with other reviewers re the salt. I'm a "salt-a-holic" and given that, I thought less salt was in order. Next time, and yes, there will cetainly be a next time for this recipe, I will cut the salt by half. Other than the salt issue, this recipe is a keeper. Thanks Ina and others for their input.

Excellent! We thoroughly enjoyed this dish last night. The only modification I made was to use ground turkey (that's we had on hand and I doubled the basil (we LOVE basil!. Oh, and I definitely let it simmer for much longer than 10 minutes. We weren't in a huge hurry so it wasn't a problem and definitely worth the wait! We used a cab sav wine. We will be making this again and again!

OMG!!!! I made this recipe last night and it's one of the best things I have ever cooked!! The flavor was so deep and rich, like it had been cooking all day. This is going to be a family favorite!! Thanks Ina, I love everything you make and love watching your show.

Didn't add the 2nd helping of wine. Adjusted salt to taste. Did need to simmer it much longer to reduce the wine but it was very tasty. BF thinks it has too much of a tomato taste. He gives it 4 stars.
