I drainned the lightly salted (kosher salt zucchini in a collander, squeezing the extra moisture out with a paper towel,.this REALLY improved my 2nd attempt. I used scallions instead of the red onion, added diced red and yellow peppers, about 1/4 to 1/2 cup each, and 4 to 8 tablepoons freshly grated parmesan cheese
I too, used a cast iron skillet. , My dinner guests were eating them as fast as I could cook them..and raved for days !! and begged for the recipe !

First let me say I made these twice. I made these adjustments..added more onions and salt and used an iron skillet the second time which made them so much more crispy. My husband also ate more than half before dinner. What a yummy way to cook zucchini.

I love, love, love this. I prepared them for the first time as side dish with dinner. My husband ate 6 of them before we sat down at the table to eat our meal. I used scallions (green onion instead of the red, it worked out great. Thanks Ina, I''m attempting the Scalloped Tomatoes recipe later this week.

First of all I thik the recipe is missing the draining the zucchini. plus i wasn't really happy with the seasoning..........too much pepper not enough other spice. but maybe when it was drained and cut back on the salt and pepper it would be good!

Thank you Ina for an easy, tasty way to prepare zucchini that my twin toddlers will eat (they gobbled it up ... with ketchup, of course! I doubled the onion, but made no other changes. We all enjoyed it.

I would rate this five stars, but I did change it a little. I didn't add any onions, but I did add a little lemon juice and lemon zest and about a half a tsp of paprika and some Parmesan cheese, and it turned out great. They took about three minutes on each side, but they were crunchy on the outside and moist on the inside. absolutely delicious. So easy too. I don't understand how some people were having problems cooking them, because it turned out so great for me and it was so easy. Loved them!!!!

Added parmesan cheese...red pepper flakes and , minced garlic. That's what cooking is about....make it your own. My husband loved them. Ina gives a basic receipe....you "turn up the volume". Thanks Ina.

Loved these!!! Have made them a few times to REVE reviews....
I even tried them with sweet potatoes.. and they were fantastic.. I am going to experiment with asparagas next!
