    Bravo!!! Another great recipe from Ina. She is my absolute favorite. Her recipes are so tasty, yet have broad appeal. I made this recipe exactly as stated, and even kept them in the oven while cooking the rest of supper. They were divine, and devoured!

    As usual, Ina took a simple item and made it just simply fantastic. I prepared these as an appertizer for a dinner of spaghetti & meatballs but now I've glutted myself on these delectable little morsels. I originally was looking for a fried zucchini recipe but didn't want the hassle of deep-frying. This is a perfect substitute! Crispy on the outside and light and creamy inside.

    Always looking for a different side, my family really doesn't like zucchini, but this recipe was delish...easy to make and taste great. My daughter likes zucchini now and wants me to make them again.

    I made these the same day they were on her show and they were delicious. They taste just like potato pancakes, but for fewer calories. I cut the recipe in half and still got six zucchini pancakes out of the mixture. I added a whole shredded carrot and a tsp of garlic powder. If you watch the oil you fry these in than they are very low in fat and calories. I will be making these again soon and can't wait to experiment with different veggies, as this is a great base recipe!

    Made these pancakes today, and they were excellent, did use onion powder, had no onions on hand, and some italian seasoning. This is a recipe you can do a lot with, a keeper for sure. Now all I need is summer to get here to have my own zucchini fresh out of my garden!!

    I was not impressed with these at all, and that really surprised me because Ina's recipes are typically fantastic. I followed her recipe directions and ate them hot from the skillet, but I found them bland and actually a little mushy. I will not make them again.

    I saw Ina's show and made this recipe the same day. It is so easy and so delicious! My husband, who thinks that the only vegetables there are in the world are potatoes really enjoyed this. The second time I made I added shredded mushrooms to it. My oldest daughter asked if we could have it again. Thank you Ina, you are the best and we love your show.

    I added an extra egg to up the protien, ate them for dinner with apple sauce and 2% greek yogurt as an alternative to sour cream. I didn't salt/drain the zucchini first, used rice flour (gluten-free and used half the salt. The batter only became loose for the last batch, use your largest pan or griddle so you can work fast and make sure your heat is high enough if they're not cooking through before overcooking on the outside. Balanced and yummy!

    I quickly threw this together for my hubby and me this evening. I used a yellow onion and didn't measure the salt (when cooking, I usually eyeball it. We ate them with a little sour cream on top and it tasted just like a potato latka. I will be making more of these. Thanks Ina!!!
